These oat slices are delicious, using fruit compote to provide the sweetness instead of too much sugar.

Ingredients

Using olive oil or rapeseed oil keeps this bar light, healthy and rich in healthy monounsaturated fats. This tray bake also freezes well. Cool thoroughly then cut into slices. Pack in airtight containers and freeze for up to 1 month, or store in the fridge for up to 1 week.

  • 50g(10½ oz) organic summer fruits or apple and berry compote
  • 150ml (5fl oz) rapeseed or light olive oil
  • 1 egg
  • 175g (6oz) rolled oats
  • 175g (6oz) self raising white flour
  • 125g (4½oz) caster sugar
  • 2tsp baking powder
  • 2tbsp ground flaxseed
  • 2tbsp sesame seeds
  • 150g (3½ oz) desiccated coconut
  • 250g (9oz) dried blueberries, cherries or mixed berries

Method

  1. Preheat the oven to 180ºC (350ºF/gas mark 4).
  2. Place the compote, egg and oil in a blender and process briefly to combine.
  3. Place the oats, caster sugar, flour and baking powder in a bowl. Stir in all the seeds, coconut and the dried berries. Pour in the compote and mix thoroughly.
  4. Spoon the mixture into a greased baking tin approximately 25x30cm. Bake in an oven for 30-35 mins until golden brown. Leave to cool in the tin then cut into slices.
