Burgers are even tastier with an extra kick. Add bacon, tomato and Cajun seasoning to your mincemeat and a healthy dollop of relish.

Ingredients

Before shaping the patties, ensure the meat is cold. Then, cool your hands under cold running water. Work as gently and quickly as possible so you don't bruise or heat the meat. This stops the burgers from getting too dense and firm.

  • Forthe burgers
  • 2 rashers streaky bacon, chopped
  • 1 tomato, chopped
  • 2tbsp Cajun seasoning
  • 450g extra-lean minced beef
  • 1tbsp tomato puree

For the relish

  • 1 red pepper, deseeded and diced
  • 2 tomatoes, deseeded and diced
  • 1 small onion, chopped
  • 2tbsp tomato ketchup
  • 1tsp vinegar
  • 1tbsp parsley, chopped

To serve

  • 4 bagels, halved and toasted
  • Few rocket leaves

Method

  1. Dry fry the bacon for a few minutes until it is just beginning to crisp. Add the chopped tomatoes and cook for 2 mins. Stir in the Cajun seasoning.
  2. Place the mince in a bowl and add the bacon mixture and puree. Season well and squish the mixture together. Divide into 4 and shape into patties.
  3. Cook on a hot barbecue until thoroughly cooked through.
  4. Meanwhile, make the relish: throw the relish ingredients into a food processor and process for a few seconds.
  5. Serve the burger on a bagel with the relish and salad.
