Guacamole & chicken sandwich
Fresh dips like guacamole are a great way to add some pizzazz to your sarnie. They're also healthier than butter or marg and make for tasty sarnies.

Ingredients
Swap a tablespoon of mayonnaise for guacamole and you'll save 76 calories. Plus, the avocado in guacamole is a great source of vitamin E.
- 4rashers streaky bacon
- 4 medium thick slices Granary bread
- 4-6tbsp guacamole
- 75g cooked chicken breast, sliced
Method
- Cook the bacon under a hot grill for 4-5 mins, turning, until crisp. Drain in kitchen paper and cool.
- Lay the bread out on a board and spread both slices with guacamole. Top with the bacon and chicken, then sandwich together.
- Wrap in clear film and refrigerate if not serving straight away. Eat within 6 hrs of making.
