Griddled prawns with guacamole
You can't beat succulent prawns griddled on the barbecue with the simple flavours of lemon, lime, olive oil and avocado.

Ingredients
Fresh prawns should smell fresh and clean, not fishy (whether raw or cooked). They should look moist too so avoid ones which seem dry or have broken shells. And when you're buying shell-on prawns, buy double the weight you'd need of shell-off prawns.
- 12large shell-on raw prawns
- 1tbsp olive oil
- Juice of half a lemon
- Salt and freshly ground black pepper
- 1 x 200g pot of fresh guacamole dip
To serve
- Lemon and lime wedges
- Crusty bread
Method
- Place the prawns in a shallow dish, add the olive oil and lemon juice and toss together. Season with a little salt and ground black pepper.
- Heat a griddle pan or barbecue and when hot add the prawns. Cook for 8-10mins, turning once until the prawns have turned bright pink and are lightly charred around the edges.
- Heap the prawns onto a platter and serve with the guacamole, lemon and lime wedges and some crusty bread to serve.
