Ainsley's brie quesadillas

These quesadillas are the perfect snack. They're quick and easy, you can create lots of different fillings and you can make them in advance!

  • Serves: 4-6

Ingredients

Ainsley says: 'They can be prepared up to one hour in advance, covered with clingfilm and kept at room temperature. Then simply flash through the oven when you are ready to serve.'

  • 8soft flour tortillas
  • 350g (12oz) Brie, thinly sliced
  • 1 mild red chilli, seeded and finely chopped
  • 1 ripe mango, peeled, stoned and thinly sliced
  • 2 spring onions, thinly sliced
  • Sea salt and freshly ground black pepper
  • 4tsp olive oil, for brushing

Method

  1. Preheat the oven to 200°C (400°F, gas mark 6) and heat a ridged griddle pan over a medium heat until very hot. Brush one side of each tortilla with a little of the olive oil. Place one tortilla in the pan, oiled-side down, and cook for 1 min until nicely marked, pressing down with a spatula. Repeat with the remaining tortillas.
  2. Arrange half the tortillas on baking sheets, marked-side down. Place a layer of Brie on top and then scatter over the chilli, mango and spring onions. Season to taste. Cover with the remaining tortillas, marked side up, and bake for about 5 mins or until heated through and the Brie has melted.
  3. Allow the quesadillas to cool slightly for ease of handling, then cut each one into eight wedges with a serrated knife, pizza cutter or kitchen scissors. Arrange on warmed plates or one large platter to serve.
