If you love pork, this dish of glazed fillet of pork with Suffolk blue cheese and Greek yogurt is easy, tasty and ready in half an hour.

Ingredients

When you're buying pork, go for cuts which are pink in colour (not grey or red) and moist in texture. It's a lean meat, but some fat, firm and white, is fine.

  • 2pork fillets
  • 2 ready potato rosti
  • 1 packet baby spinach
  • 50g of grated blue cheese
  • 100g Greek yogurt
  • 25g fresh breadcrumbs
  • Pinch of salt and pepper
  • 2tbsp vegetable oil

Method

  1. Mix the blue cheese, bread crumbs and Greek yogurt together.
  2. Season the pork fillets with salt and pepper then seal in a hot pan.
  3. Roast in a hot oven until slightly pink then leave to rest for 10 mins. At the same time, heat rosti according to packet instructions.
  4. Wilt down spinach in a separate pan.
  5. To serve, place the rosti on a plate and put the wilted spinach on top of the rosti. Slice the pork and arrange on top of spinach. Spoon yogurt mixture on top and glaze under a hot grill until golden brown.
