These colourful, tasty jam tarts are great for kids' parties or as an afternoon treat. They're really easy to make too.

Ingredients

Cassandra Andrews, 63, from Inverness suggests adding a bay leaf to your flour container to keep it free from moisture.

  • 175g(6oz) plain (all-purpose) flour
  • A pinch of salt
  • 75g (3oz) hard block butter, diced
  • Cold water, to mix
  • 90ml (6tbsp) smooth squeezy jam

Method

  1. Sift the flour and salt in a bowl. Add the butter and rub in with the fingertips until the mixture resembles fine breadcrumbs. Mix with enough cold water to form a firm dough.
  2. Knead gently on a lightly floured surface. Roll out and use to line a 20cm/8 in pie plate. Trim the edge and decorate with the prongs of a fork.
  3. Squeeze the smooth squeezy jam in the centre of the pastry.
  4. Bake in a preheated oven at 200°C (400°F, gas mark 6) for about 20 mins until the pastry is golden and the jam is bubbling. Serve warm or cold.
