These turkey, spicy tomato and sweet onion pittas are healthy, low-fat and packed with flavour. Great for lunch or as a light snack.

Ingredients

Instead of using the tomato and onion sauce, try this with pesto instead. And you can use chicken stir-fry strips or sliced lean lamb instead of turkey.

  • 1tbspvegetable oil
  • 150g turkey stir-fry strips
  • 150g pot of spicy tomato and sweet onion stir-in sauce
  • 2 pitta breads
  • Mixed salad leaves
  • 6 cherry tomatoes, halved
  • Cucumber slices
  • Chopped spring onion

Method

  1. Heat the vegetable oil in a wok or frying pan. Add the turkey and stir-fry over a medium-high heat for 4-5 mins, or until the turkey is cooked and browned.
  2. Add the pot of spicy tomato and sweet onion stir-in sauce. Cook for a few moments until heated through.
  3. Warm the pitta breads in a toaster or under the grill. Split them open then stuff them with salad leaves, tomato, cucumber and spring onion and share the turkey mixture between them. Serve at once.
