Tastier than plain cheese and ham, this toastie with cranberry and caramelised red onion chutney is great for quick lunches.

Ingredients

To make a real meal of it, serve with chips and a dressed salad.

  • 8 medium slices of white bread
  • 6tbsp (90ml) cranberry and caramelised red onion chutney
  • 8 thin slices smoked ham
  • 100g (4oz) Gruyere cheese, sliced
  • 50g (2oz) softened butter

Method

  1. Pre-heat a large non-stick frying pan. Arrange the bread on the work surface in pairs for a sandwich and spread each slice with a little chutney.
  2. Top one slice of each bread with a slice of ham, a slice of cheese and then a second piece of ham. Sandwich together with the other bread.
  3. Spread the outsides of the sandwiches with butter then cook two at a time in the hot frying pan, for 4-5 mins, turning once, until the sandwiches are golden and crisp. Remove from the pan and cook the other two in the same way. Cut in half and serve hot.
