James Tanner's chilli chicken stir-fry

The TV chef shows us how to knock up a 15-minute Oriental-style chicken stir-fry. This one's only £2.15 per head and is really easy to follow in our step-by-step video.

Ingredients

Top tip: If you don't have a food processor, place the garlic and chilli on a chopping board and finely mince with a knife, using the side of the blade to make a paste.

  • 2 x packets of special fried express rice
  • 4 cloves of garlic
  • 12 mini chicken fillets
  • 300g green beans
  • 1tsp of fish sauce
  • 1tbsp of reduced-sodium soy sauce
  • 3 large red chillies
  • 20g basil leaves
  • 2tbsp of vegetable oil

Method

  1. Roughly chop the garlic and two of the chillies. Put both ingredients in a food processor with a tbsp of vegetable oil and blend to a paste.
  2. Place a wok or a large non-stick frying pan over a high heat for 1 min, heat the remaining oil and add the garlic and chilli paste. Stir-fry for 10 seconds then add the chicken and beans.
  3. Cook for 5 mins stirring constantly, add the fish sauce, soy sauce, and the remaining chilli sliced on the angle. Continue to cook for 2 mins.
  4. Whilst cooking, heat up the special fried express rice from the packet instructions, add the basil leaves to the pan and stir into the chicken mixture. Serve immediately with the warmed rice.
