Ingredients
- 2kg chicken
- 1 lemon
- Fresh herbs (parsley or bay)
- Garlic
- Olive oil
- Salt and pepper
Method
- Preheat oven to 220°C.
- Wash chicken inside and out then dry thoroughly.
- Stab lemon with a knife and put in the microwave for no longer than 10 seconds.
- Put the hot lemon inside the chicken to start cooking it from the inside and to keep chicken moist.
- Stuff in the herbs, garlic cloves and rub olive oil on top which will give the chicken crispy skin.
- Season with salt and pepper.
- Slash thigh meat to make sure heat can penetrate chicken evenly.
- Cook chicken for 10 mins at 220°C.
- Take out the chicken, baste some of the juices over it and return to oven at 180°C.
- Cook for 20 minutes per 500g and then an extra 10 mins at the end.
- Check the chicken is cooked by parting the meat at the thickest point and making sure the juices run clear.
- Rest for at least 10 mins before carving
