Video recipe: How to roast a chicken

Ingredients

  • 2kg chicken
  • 1 lemon
  • Fresh herbs (parsley or bay)
  • Garlic
  • Olive oil
  • Salt and pepper

Method

  1. Preheat oven to 220°C.
  2. Wash chicken inside and out then dry thoroughly.
  3. Stab lemon with a knife and put in the microwave for no longer than 10 seconds.
  4. Put the hot lemon inside the chicken to start cooking it from the inside and to keep chicken moist.
  5. Stuff in the herbs, garlic cloves and rub olive oil on top which will give the chicken crispy skin.
  6. Season with salt and pepper.
  7. Slash thigh meat to make sure heat can penetrate chicken evenly.
  8. Cook chicken for 10 mins at 220°C.
  9. Take out the chicken, baste some of the juices over it and return to oven at 180°C.
  10. Cook for 20 minutes per 500g and then an extra 10 mins at the end.
  11. Check the chicken is cooked by parting the meat at the thickest point and making sure the juices run clear.
  12. Rest for at least 10 mins before carving
