Ingredients

Add a chicken stock cube to your water when cooking the couscous for extra flavour.

  • 2 boneless, skinless organic or free-range chicken breasts, thinly sliced
  • 1 Thai-style lime, red chilli and coconut stir fry sauce (like Chicken Tonight)
  • 55g baby spinach leaves
  • 2tbsp finely chopped fresh coriander

Check you've got:

  • 1tbsp olive oil
  • 1 medium red onion, finely sliced
  • 140g couscous
  • 25g toasted flaked almonds

Method

  1. Heat half the oil in a pan, add the onion and cook until soft.
  2. Cook the couscous according to packet, then stir in the onion, reserving a few slices. Keep warm.
  3. Heat the remaining oil and saute the chicken for 5-10 mins. Add the sauce and spinach and simmer for 3 mins.
  4. Scatter almonds and reserved onion slices on the chicken. Serve with couscous topped with coriander.
