Lemon meringue nests

A simple yet delicious dessert that can be made in minutes. Cook along with Sue McMahon's video recipe.

Eat nests soon after they’re made otherwise the meringue goes soft from the cream.

Ingredients

  • Ready made meringue nests
  • Crème fraiche
  • Good quality lemon curd
  • Raspberries
  • Icing sugar
  • Mint

Method

  1. Mix together crème fraiche with the lemon curd.
  2. When evenly mixed, spoon the mixture into the centre of the meringue nests.
  3. Decorate with raspberries.
  4. Dust over with icing sugar.
  5. Put a sprig of mint on top of each.
