Ingredients

For the whoopie pies:
  • 250g unsalted butter
  • 175g (6oz, 1 cup) firmly-packed soft brown sugar
  • 1 egg
  • 100g (4oz, ½ cup) unsweetened cocoa
  • 300g (10oz, 2 cups) plain flour
  • 240ml (8fl oz, 1 cup) of sour cream
  • 1tsp baking powder
  • 1tsp salt
  • 1tsp pure vanilla extract
  • Splash of milk
For the filling:
  • 250g unsalted butter (room temperature)
  • 225g (8oz, 1½ cups) icing sugar
  • 300g (10oz, 2 cups) Marshmallow Fluff (optional)
  • 1½tsp pure vanilla extract

Method

  1. Preheat oven to 350°F (180°C, gas mark 4). Line baking tray with greaseproof paper
  2. In a large bowl (or electric mixer), cream together butter, sugar, and finally the egg. In another bowl, combine cocoa, flour, baking powder and salt.
  3. Add the dry ingredients to the mixture then add the milk, vanilla and sour cream; beat until smooth.
  4. Put equal amounts of batter (½ cup or a ice-cream scoop) onto the lined baking tray - 6 per tray as they will spread when baking.
  5. Bake for 10 mins or until when pressed the sponge keeps its shape. Remove from oven and leave to cool completely on a wire rack.
  6. To make the filling: Beat the butter in a bowl until soft, gradually sieve in the icing sugar, add in the vanilla extract and beat the mixture well. Next fold in the Marshmallow Fluff if using.
  7. Add to a piping bag with star shaped nozzle and pipe on to one of the whoopie pies. Sandwich another whoopie pie to the icing.
  8. For finishing touches, sieve 150g (5oz) icing sugar into a medium bowl and gradually add enough water to make a smooth, spreadable icing. A few drops of food colouring will give you a colourful finish. Decorate with your favourite sprinkles.
