Ingredients

  • 90g butter, softened
  • 100g golden caster sugar (eg. Billington's)
  • 1 egg
  • tsp vanilla extract
  • 200g plain flour
  • tsp baking powder
  • salt

Method

  1. Sieve the flour, baking powder and salt into a bowl and set aside.
  2. In a large bowl, cream the butter and sugar until pale.
  3. Beat in the egg and vanilla extract. Add the flour to the butter mix and mix until the dough is formed.
  4. Wrap the cookie dough in cling and chill for at least 1 hr.
  5. Preheat the oven to 170C (fan 150C).
  6. Roll the dough out on a lightly floured surface to about 0.5cm. Cut out the cookies and transfer to baking sheets.
  7. Roll up the trimmings and repeat stages above to make more cookies.
  8. Bake for 8-12 minutes until golden. Remove and transfer to a cooling wire and leave until completely cool before decorating.
