  • 450g pack tomatoes, halved
  • 1⁄2tbsp thyme leaves

  • 2tbsp balsamic vinegar
  • 1tbsp olive oil

  1. Heat the oven to Mark 2/150°C. Arrange the tomatoes in a roasting tin and drizzle with the balsamic and olive oil. Sprinkle with the thyme leaves and season well with salt and freshly ground black pepper. Bake for 1-2 hours until lightly caramelised.
