Julia Parsons' Coca-Cola Cherry ice cream sundaes
This is a modern twist on the classic favourite, Coca-Cola float! With hidden cherries beneath the billowing ice cream, frothing up with the Coca-Cola Cherry, they’re a real treat for the family.

Ingredients
These sundaes would be great for a party, why not give your guests a treat and serve with sparklers?
- 200g cherries, pitted and halved
- 8 scoops of good quality vanilla ice cream
- Approximately 120ml Coca-Cola Cherry
To finish
- dark chocolate, grated
- 4 cherries, pitted
Method
- Put a few of the cherry halves into the bottom of 4 sundae dishes and then add a scope of vanilla ice cream to each.
- Here comes the fun part; add a little Coca-Cola Cherry (about 2 tablespoons) to each dish and it will start to froth up the ice cream.
- Add the rest of the cherries to each dish, on top of the ice cream, and then add another scope of ice cream to each.
- Top each dish with a little grated dark chocolate and a cherry
