BLT is a classic sandwich filling. Go all out by combining it with cheese and fried egg in a toastie for a great warming snack


  • 8 slices streaky bacon
  • 2 tablespoon mayonnaise
  • English mustard
  • 8 slices aged cheddar
  • 8 slices sourdough bread, toasted
  • 4 eggs
  • 4 tomatoes, sliced
  • lettuce

Scrambled eggs or egg mayonnaise would also work well in this toastie


  1. Heat a frying pan over a medium heat. When hot, add the bacon and fry for five minutes each side, turning at least twice until cooked to your liking. Drain on kitchen paper and set aside. Keep the pan and bacon fat.
  2. Spread mayonnaise and a little English mustard on one side of the toast and top with the bacon and cheese. Return the frying pan to the heat and when hot break the eggs into the bacon fat. Fry, turning once, until cooked. Place on top of the cheese. Layer the tomatoes and lettuce, top with the remaining slice of bread and serve.
