You can't beat a nice chunky chicken soup and this recipe is just delicious. The coconut milk gives it a great creamy texture - a perfect lunch or light dinner

Ingredients

  • 2 skinless chicken breast fillets
  • 2 tbsp extra virgin olive oil
  • 1 onion, peeled and finely chopped
  • 1 clove garlic, peeled and crushed
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 850ml/1/12 pts chicken stock
  • 3 tbsp coconut milk
  • Salt and freshly ground black pepper
  • Whole basil leaves

Make your own chicken stock with this easy recipe

Method

  1. Poach chicken breast fillet or cook in the microwave covered with film until just opaque - it finishes cooking in the soup.
  2. Heat extra virgin olive oil in a pan and add onion, and garlic and cook gently to soften. Add coriander and cumin and pour over chicken stock. Bring to bubbling, then add coconut milk.
  3. Cut chicken into thin strips. Add to soup and bring back to bubbling. Season with salt and freshly ground black pepper.
  4. Stir in basil leaves and serve immediately.

Spell Binder

I made this soup today. Surprisingly it came out really well. I was a lil apprehensive about the coconut milk, but it suited beautifully! I used niblets instead of chicken breast n boiled it in the step where the recipe says add chicken stock (along with the stock). I thought itd give a better flavour which it did. After it was boiled n cooked,I took them out of the soup, added the coconut milk, chopped the chicken into chunky pieces n added it back in. Also the soup was a little runnier than my liking at the end, so I added a bit of corn flour just to thicken it up. Overall, a very nice soup with a diff twist on the normal chicken soup. Defo will b making this again.:)
