Guacamole and prawn spaghetti
Skill level: Easy peasy
Costs: Cheap as chips
This guacamole and prawn spaghetti is perfect for those evenings when you get home and have nothing in the fridge to cook, but don't fancy yet another omlette. Everyone always has half a tub of pre-made guacamole lurking at the back of the fridge and some frozen prawns in the freezer - throw them together with spaghetti for a deliciously different dish. It makes the perfect pronto dinner for two with simple ingredients - healthy and simple. If you have more time or more money then try out fresh King prawns and make your own guacamole at home.
- 150g (5oz) spaghetti
- 175g (6oz) cooked king prawns
- 170g pot ready-made guacamole
Don’t heat the guacamole or the sauce may split.
- Bring a large pan of salted water to the boil, add the spaghetti and then/cook for about 10 mins until “al dente” — tender, yet still with a slight bite.
- Drain the spaghetti and leave it in the colander. Add the prawns to the pan (with a little oil, if you like) and heat through for a minute. Return the pasta to the pan with the guacamole. Turn off the heat, stir and serve.
