We know what it's like when you're browsing a site with as many recipes as ours. You find a brilliant recipe, want to make it again, but can't remember how you found it!

Whip up these easy little brownies in no-time. Don't be scared by the mayonnaise in the ingredients, it works the same way as butter

Ingredients

  • 40g plain flour
  • 1 tsp baking powder
  • 25g cocoa powder
  • 140g plain chocolate, broken into small pieces
  • 3 medium eggs
  • 225g caster sugar
  • 1 tsp vanilla essence
  • 110g mayonnaise
  • 55g walnuts, finely chopped

You can also melt your chocolate in the microwave on medium power, stirring occasionally, until just melted

Method

  1. Lightly grease a 23cm square cake tin and line with baking paper.
  2. Sift the flour with the baking powder and cocoa.
  3. Put the chocolate into a heat proof bowl over a saucepan of hot water and leave until melted.
  4. In a large bowl, whisk the eggs with the sugar and vanilla until slightly thickened. Whisk in the chocolate mixture. Fold in the flour mixture, mayonnaise and walnuts.
  5. Pour into the prepared tin and bake in a preheated oven at 16O°C for about 30-35 minutes or until a skewer inserted in the centre comes out clean
  6. Leave to cool in the tin before cutting into squares.
