We know what it's like when you're browsing a site with as many recipes as ours. You find a brilliant recipe, want to make it again, but can't remember how you found it!

Pancakes with fruit and vanilla cream

Give your pancake an extra sweet taste by filling it with this delicious creamy fruit mix. Perfect for Pancake Day or just as a dessert for a family meal

Ingredients

  • 250g plain flour
  • 2 eggs
  • 600ml full-fat milk
  • 50g butter
  • 300ml whipping cream
  • ½tsp vanilla extract
  • Strawberries, raspberries, blueberries or seasonal fruit of your choice, to fill
  • Icing sugar, to dust

Method

  1. Sieve the flour into a bowl. Add the eggs and whisk together. Slowly whisk in the milk until smooth.
  2. Heat a little butter in a large frying pan. When sizzling, add a ladle of pancake mix, tipping the pan to cover the surface.
  3. Cook for 1 min, then turn over to cook the other side. When golden on both sides, remove to a plate. Repeat to use up the batter, keeping the cooked pancakes warm and interleaved with greaseproof paper.
  4. Whip the cream and add the vanilla extract. Chop the fruit into small, bite-sized chunks.
  5. To serve, add a spoonful of cream and a handful of fruit to a pancake and fold in half. Dust with icing sugar and serve.
