Coconut and lime cake

Celebrate the start of Spring with this delicious coconut and lime cake. So simple to make and the whole family will love it!

If the top becomes too brown near the end of the cooking time, cover with a piece of parchment.


For the cake:

  • 175g (6oz) butter, softened
  • 3 large eggs, beaten
  • 250g (7oz) condensed milk, such as Carnation
  • 40g (1½oz) desiccated coconut
  • finely grated zest and juice 1 lime
  • 175g (6oz) self-raising flour
  • 1tsp baking powder
For the icing:

  • 100g (3½oz) icing sugar
  • Zest and juice 1 lime


  1. Preheat the oven to 170°C, (150°C for fan ovens), Gas Mark 3.
  2. Grease and base line a 900g (2lb) loaf tin with baking parchment.
  3. Place all the cake ingredients into a large bowl and beat using an electric hand whisk until just smooth and pale.
  4. Pour into the prepared cake tin and bake for 55-65 minutes until a skewer comes out clean when inserted into the middle of the cake.

I made a cream cheese frosting to go on the top of this cake


I think it would look better if the glace icing were made a bit thicker so it didnt run down the sides - I think it is wasting good icing to have it all over the table!


Dee, it is definitely Sweetened Condensed Milk, as this is where the sweetness/ sugar content comes from. Carnation make both Condensed and Evaporated Milk. I am making this for a charity stall at an Open Garden Scheme.

Can you give me an ingredients check please? When I think of Carnation I think of Evaporated milk not Condensed milk - which is it please?
