You might remember Harry Eastwood from Channel 4's Cook Yourself Thin. Harry's baking book, Red Velvet & Chocolate Heartache is packed with lower-calorie, gluten-free cake recipes secretly made with vegetables!

Harry moved to Paris in 2010 to research and write The Skinny French Kitchen and has recently launched a line of lower-fat vegetable cupcakes, Petit Pois Cakes, with entrepreneur Ashley Maddox. These cakes-with-a-twist are now available to buy in Selfridges. So who better to ask for some top tips on lower-fat baking and the latest cake craze, making healthier cakes with vegetables?

The secret ingredient...
You'd never guess Harry's cakes are full of pumpkin, courgette or beetroot - there's actually more grated vegetable in each cake than any other single ingredient. And with no flour and no butter, they are, dare we say it, almost good for you! The cakes contain less than half the calories of normal cupcakes.
