Our recipe for rocky road brownies is based on the classic American rocky road treat, a no-bake slice packed with milk chocolate and marshmallows.
This delicious twist on our chocolate brownie recipe takes only 20 minutes to prepare as it's such a simple and easy recipe, even though there are quite a few ingredients. Unlike a classic rocky road which you just pour into a tin and allow to set, you will need to bake these brownies. But just like the original, each piece still contains caramel-filled sweets, nuts, and gooey marshmallows. It's topped with a thick fudgey icing which all the lovely rocky road toppings stick to like glue.
Ingredients
- 350g softened butter
- 500g sugar
- 150g good quality cocoa powder
- 100ml golden syrup
- ½ tsp salt
- 6 free-range eggs
- 200g plain flour
For the fudge icing:
- 300ml double cream
- 100ml milk
- 100ml golden syrup
- 400g good quality dark chocolate, 70% cocoa solids
For the rocky road topping:
- 2 handfuls soft caramel sweets
- 50g pistachios
- 100g salted peanuts
- 2 handfuls mini marshmallows

Method
- Boil the cream, milk and syrup. Remove the pan from the heat and let the liquid cool a few degrees.
- Finely chop the chocolate and fold it into the warm cream, so the chocolate melts.
- Spread the icing over the cake and sprinkle with chopped caramels, pistachios, peanuts and marshmallows.
- Refrigerate until the icing is firm and then cut into squares.
Top tips for making rocky road brownies:
To find out if your brownies are done yet, poke through the middle with a toothpick. If the toothpick comes out moist with chocolate mixture, the brownies aren't finished yet. But if the toothpick just comes out with melted marshmallow then the brownies are probably done.
