This beef quesadillas with tomato and avocado salsa makes a perfect combination of thin crisp crust and gooey cheesy centre which guarantees you will cook them again. Quesadillas make a perfect casual meal for friends or family as you can mix up different combinations and share. They are also a great way to use up leftover meat or vegetables from the fridge. Or try serving with guacamole or sour cream as a starter or snack to share. Just as tasty cold so wrap up any and leftovers and take them in for lunch.


  • 2tbsp olive oil
  • 1 large onion, finely sliced
  • 2 red peppers, sliced
  • 1 red chilli, finely chopped
  • 6 spring onions, finely sliced
  • 3tbsp coriander, finely chopped
  • 500g beef steak, thinly sliced
  • 1tsp paprika
  • 100g cheddar cheese, grated
  • 125g mozzarella, torn
  • 8 flour tortillas
  • 3 tomatoes, finely diced
  • 1 avocado, finely diced
  • Cream cheese, to serve

Try frying on a griddle pan to get great char lines on the tortillas!


  1. Heat 1tbsp of oil over a medium/high heat in a large frying pan. Add the onion and pepper and cook for 5 mins, then stir through the chilli and spring onions and cook for a further 5 mins until soft. Stir through the coriander, transfer to a bowl and keep warm.
  2. Toss the beef in the remaining oil and paprika. Place the pan over a high heat and fry the beef for 5 mins until browned but still slightly rare inside.
  3. Heat a separate frying pan over a medium heat. Place a tortilla in the base and scatter over a ¼ of the vegetables, a ¼ of the beef a ¼ of each of the cheeses. Sandwich with another tortilla and heat for 1 ½ mins before carefully flipping over. Keep warm while you make the remaining quesadillas.
  4. Chop into wedges and serve with the tomatoes and avocado mixed together for a simple salsa and the cream cheese.
