Salmon fillet is a great meaty fish which holds it shape well. It can be cooked by steaming, frying, grilling, poaching or baking. This tangy marinade works well with the salmon and the longer you can leave the fillets to marinate the better they will taste. Try serving on a bed of basmati rice or use it as the base to a stir-fry and chuck in loads of healthy veg. Its naturally sweet taste also makes salmon the ideal fish to serve to seafood-shy kids - its meaty texture will also help if they aren't keen on new textures with their food.
Ingredients
- 2tsp of honey
- 1tsp lime juice
- 1tsp soy sauce
- 2 salmon fillets

Method
- Mix the honey, lime and soy in a shallow bowl and add the fillets. Allow to marinate for a minimum of 15minutes. Heat a frying pan until hot and place the fillets skin side down first to crisp up. Turn after 2mins and cook for a further 2-3mins. Serve.
Top Tip for making Sweet and sour salmon
Use zipper sandwich bags to hold the marinating salmon in. No washing up!
