Chickpea pesto salad

This fragrant and super healthy salad is a lovely addition to the dinner table. Sweet tomatoes, piquant kalalmata olives and starchy chickpeas make this a super-food recipe; mixed together with a zesty pesto dressing, this salad is sure to be a winner as a side dishto grilled meats or top with feta cheese to make it a wonderful vegetarian main meal.
- 1 tin of chickpeas, drained
- 300g punnet of cherry tomatoes
- 100g whole kalamata olives
- 4tbsp pesto
- 1 lemon, zest and juice
If somebody doesn’t like pesto, simply toss the salad in the lemon juice and olive oil instead.
- Combine the pesto, zest and juice of the lemon in a large bowl. Tumble in the chickpeas, tomatoes and olives and toss all together to combine. Serve.
