Chicken lattice pie recipe

Our chicken lattice pie is cheap and easy to make and uses cooked chicken for a quick, hearty filling.

This chicken lattice pie takes an hour to make and serves four people. 

Joe Wicks chicken pie looks attractive, but we think the family will be impressed with the lattice topping from this pie recipe. It’s easier to achieve than you might think and will take only five minutes to achieve. The recipe serves four but could stretch tp six if serving with mashed potatoes and veggies on the side. 

Ingredients

  • 1 knob butter
  • 2 garlic cloves, peeled and roughly chopped or grated
  • ½ onion, thinly sliced
  • ½ tsp chilli powder
  • 400-500g Pre-cooked or leftover chicken, shredded
  • 10 chestnut mushrooms, roughly chopped
  • 300ml double cream
  • 1 glass white wine
  • Leaves from 1 sprig tarragon, chopped
  • 1 sheet puff pastry
  • 1 egg, beaten

Method

  1. In a large frying pan, melt the butter and gently cook the garlic and onion until soft. Add the chilli powder, stir and cook for 1 minute.
  2. Add the chicken, mushrooms, cream and wine. Stir and cook for 10 minutes until the sauce reduces and coats the chicken and mushrooms. Add the tarragon.
  3. Remove from the heat and transfer to a 24cm pie dish. Heat the oven to 180C (160C fan, Gas 4).
  4. Make the lattice pastry top by rolling out the puff pastry sheet to approx. 0.5 cm thick, then using a sharp knife cut into approx. 12 x 1cm strips. Carefully overlap and underlap the strips to form a lattice pattern.
  5. Brush the pastry with beaten egg and bake the pie for 20-25 minutes, until the pastry is golden and crisp. Allow to cool for 5 minutes before serving with your choice of sides.

Top tips for making chicken lattice pie

If you don’t have time to make the lattice top, just roll out the pastry to 0.5cm thick and trim it to the size of your pie dish. You can also fry some raw chicken breast chunks or strips of chicken thighs once the onions are soft if you don’t have cooked leftover chicken. 

Chestnut mushrooms have a delicious, slightly nutty flavour but other wild mushrooms or even just button cup mushrooms are fine too. Continue reading for more tips and tricks. 

Can you do a lattice with puff pastry?

Yes, this recipe uses puff pastry to create the lattice pattern on top. When you spread the strips on top, you might want to leave a little space between them. This will help the steam of the filling to escape and will keep your pastry nice and crisp.

If you fancy something different to the creamy tarragon sauce in this recipe, feel free to experiment. You could add some smoked paprika and a tin of chopped tomatoes if you prefer a tomato based sauce. Or use some spices like garam masala and a spoonful of mango chutney for a curry-inspired pie filling instead. 

What to serve with a chicken lattice pie?

The pastry makes this pie quite filling so you might find a side of mashed potatoes too much. Some people like to serve their pie with chips or roast potatoes. Others prefer something lighter such as sautéed cabbage and peas or a crisp green salad.
