Karen S Burns-Booth's Lavender and Lovage blog is full of delicious-looking meals that are easy to recreate at home.

We asked Karen to take part in our challegne to feed a family for £50 a week and tell us how she manged to feed her family tasty meals on a budget. Read her meal plan and take a look at her Asda shopping list to see how she managed to do it and get some inspiration for cooking for your family on a budget. 

 

Karen says:

'I found the challenge very easy to follow as I cook most meals from scratch and also use leftovers a lot. My normal budget is not much more than £50 a week, as I grow a lot of my own vegetables, fruit and herbs, and have my own chickens for eggs.


'My menus were based on dishes and recipes that the family like, and we also have a couple of "take away" meals by treating ourselves to frozen pizza, chips and a ready-made quiche, as time was at a premium those days.'

 

 

Monday

 

  • Breakfast: Bacon and eggs with toast
  • Lunch: Curried mince Kheema with rice
  • Supper: Curry puffs and salad (made with leftover curried mince Kheema & rice)

Karen says: 'Monday's menu was very frugal as I used the leftover mince Kheema to make some little pies for supper.'

  • 500g Butcher's minced beef = £2:00
  • 2 large onions (from 1 kilo bag = £1) = 20p
  • 1 x 400g tin tomatoes = 31p
  • 2 tablespoons frozen peas (from kilo bag = 99p) = 12p
  • 2 tablespoons red lentils (from 500g bag = £1) = 15p
  • 2 tablespoons mild curry powder (from 100g bag = 61p) = 20p
  • 2 sachets rice (from 8 sachet boil in the bag rice = £1:44) = 36p
  • Puff pastry = £1:00
  • Bag of 100g Florette sweet and crunchy salad = £1:00
  • ¼ jar salad dressing (Hellmanns Fat-Free Vinaigrette = £1:00) = 25p
  • Bacon (1/2 of smart smoked back pack 312g = £1:70) = 85p
  • 6 Eggs (from a dozen Lancashire Free Range Medium = £1:98) = 99p
  • 1 pint semi-skimmed milk (from 4 pint bottle = £1:00) = 25p
  • 6 slices (from Bakers Gold Oat Farmhouse = £1:30) = 40p

Tuesday

 

  • Breakfast: Porridge
  • Lunch: Welsh Rarebit with grilled tomatoes
  • Supper: Cajun chicken kebabs with wraps, dip and salad
  • Dessert: Fresh fruit salad

Karen says: 'Tuesday's menu was a request for me to make chicken kebabs, and was a huge hit.'

  • Porridge oats (from 500g Scottish porridge oats = 65p) = 15p
  • 2 pints semi-skimmed milk (from 4 pint bottle = £1.00) = 50p
  • 8 slices (from Bakers Gold Oat Farmhouse = £1.30) = 60p
  • A little margarine (from 250g Pro-activ = £1.90) = 20p
  • 100g Cheddar cheese (from Mature grated Cheddar cheese 250g = £1:90) = 76p
  • 4 tomatoes (from 750g salad tomatoes = £1.50) = 75p
  • 4 x chicken breast fillets (from 1 kilo ASDA Smart Chicken Breast Fillets = £3:99) = £1:98
  • 4 x wraps (from 8 pack large tortilla wraps = £1.00) = 50p
  • 1 jar hot Tex Mex salsa = 88p
  • 1 x pack crispy leaf salad = £1.00

  • Breakfast: Boiled eggs and soldiers
  • Lunch: Vegetable soup and crusty bread
  • Supper: Fish pie with a cheesy topping and peas
  • Dessert: Ice cream

 

Karen says: 'Wednesday was also a recipe request, and I made family size fish pie for supper with a VERY cheap and cheerful vegetable soup for lunch.'

 

 

Food used:

  • 4 eggs (from a dozen Lancashire free R=range Medium = £1.98) = 66p
  • 4 slices bread (from Bakers Gold Oat Farmhouse = £1.30) = 30p
  • A little margarine (from 250g Pro-activ = £1.90) = 20p
  • 450g haddock fillets = £3.00
  • 500g potatoes (from 2 kilo pack = £2.00) = 50p
  • 320g frozen peas (from kilo bag = 99p) = 32p
  • 150g Cheddar cheese (from Mature grated Cheddar cheese 250g = £1.90) = £1:14
  • ½ pint semi-skimmed milk (from 4 pint bottle = £1.00) = 13p
  • I x 400g pack of soup vegetables = 80p
  • 2 x vegetable stock cubes (from pack of 8 = 78p) = 18p
  • Baguette = 75p
  • 1/2 x pack of litre ice cream (£2.00) = £1.00

Total = £8.98

 

Thursday 

 

  • Breakfast: Cereal
  • Lunch: Quiche and salad
  • Supper: Sausage casserole

 

Karen says: 'Thursday was an easy day with cereal for breakfast and a readymade quiche for lunch, but I prepared the sausage casserole early on in the day and cooked it slowly ready for the evening.'

 

 

Food used

  • ¼ box of Honey Nut Cornflakes Cereal (£2.24) = 56p
  • 1 ½ pints semi-skimmed milk (from 4 pint bottle = £1.00) = 63p
  • 1 x pack pork sausages (454g) = £1.38
  • 1 x 400g tin tomatoes = 31p
  • 2 large onions (from 1 kilo bag = £1) = 20p
  • 500g potatoes (from 2 kilo pack = £2.00) = 50p
  • 1 x pack sausage casserole seasoning = 54p
  • 300g carrots = 50p
  • 1 x pack crispy leaf salad = £1.00
  • ¼ jar salad dressing (Hellmanns Fat-Free Vinaigrette = £1.00) = 25p
  • 1 x cheese and onion quiche = £2.38

Friday

 

  • Breakfast: Scrambled eggs on toast
  • Lunch: Salmon in filo pastry parcels with boiled potatoes and spinach
  • Supper: Pizza and chips

 

Karen says: 'Friday was pizza night, but, I also made some little salmon parcels for lunch, and they are always a hit for lunch box meals too.'
