At Gousto, we take inspiration from the Mediterranean lifestyle and diet. Cooking with olive oil rather than butter and enhancing flavour with herbs and spices rather than salt. These turkey burgers are a prime example of these cooking guidelines. Here we replace the red meat commonly found in burgers for the healthier, but delicious and moist, turkey mince, use lots of basil, and only cook with olive oil. The taste is great, and we really think this could be the burger of summer! Try it yourself.


  • 500g minced turkey thigh
  • 2 medium onions
  • 2 cloves of garlic
  • 4 tomatoes
  • 30g capers
  • 14g fresh basil
  • 2 par-baked or fresh ciabattas
  • 300g new potatoes
  • 30g black olives

Swap the ciabatta rolls for wholemeal rolls instead if you're trying to be good


  1. Turn on the oven to 220C/400F/200C Fan/Gas Mark 6.
  2. Wash the new potatoes and cut them to roughly the same size (approx. 3cm chunks). Coat them in olive oil and season well with salt and pepper. Put them in the oven on a roasting tray for 25 min or until crisp and cooked through.
  3. Peel and chop the onions very finely (our onions may vary in size, use the equivalent of two medium onions). Crush the garlic with the side of a knife, peel and chop finely. Wash the tomatoes and basil, and chop roughly. Drain, rinse and chop the olives
  4. Mix the tomato, basil, capers, olives and half the onion (save the other half for the next step) with 4 tbsp of olive oil. Set aside.
  5. Mix the turkey, garlic and remaining onion in a large bowl. Season with salt and pepper to your taste. Using your hands here works well, but wash them well before and afterwards!
  6. Form 4 burgers from the mixture. Make sure they are not very thick, about 1.5cm and the same size
  7. Put the ciabattas in the oven on a baking tray for 8-10 min
  8. Put a frying pan with 2 tsp of olive oil on a medium/high heat. Fry the burgers until cooked through (approx. 10 min) turning occasionally. Adjust the heat to prevent burning.
  9. Remove the potatoes and ciabattas from the oven. Assemble the ciabatta burgers topped with the tomato salsa and serve with the potatoes on the side.
