Woman's Weekly recipe These classic Mexican quesadillas are so simple to make. Serving between 6-8 people, these bites are ideal if you've got your friends and family over for dinner. The chorizo adds a delicious, spicy flavour to each quesadilla making them mouth-watering and moreish. The manchego, which is a rich, cream cheese, adds a delicious texture to each tortilla wrap. Serve with fresh salad leaves, guacamole and sour cream too.


  • 2 flour tortillas
  • 50g manchego cheese, grated
  • 60g chorizo sausage, chopped we used readydiced from Waitrose
  • 1 tbsp chopped fresh coriander
  • Oil, for greasing

Make your quesadillas that little bit healthier by using wholemeal tortilla wraps instead


  1. Heat a lightly oiled frying pan and lay a flour tortilla on it. Scatter over half the cheese, then the chorizo and coriander. Sprinkle over the remaining cheese and place the other flour tortilla on top.
  2. Cook over a med heat, pressing the top tortilla down well. Cook for 2-3 mins, until the bottom tortilla is golden and the cheese is starting to melt, then flip it over and cook on the other side for a further 2-3 mins.
  3. Take the frying pan off the heat. Cut the tortilla into wedges and serve immediately.
