This wholegrain mustard recipe uses many of the ingredients you'll already have in your cupboard and you can make it as strong or as sweet as you like, just by adjusting the quanitites of mustard seeds, sugar and mustard powder.

  • 30g mustard powder
  • 30g mustard seeds
  • 1 tbsp brown sugar
  • 3 tbsp white wine vinegar
  • 8 tbsp cold water

You can add more water if you prefer a runnier mustard, more sugar to make it sweeter or swap the vinegar for water if you want to make it a little less sour.

  1. Combine all ingredients in a pestle and mortar and grind until the mustard reaches the correct consistency.
  2. Leave overnight in a sterilised jar, allowing the flavours to develop.
