Classic tomato sauce

Learn how to make a classic tomato sauce using passata, garlic, herbs and red wine for richness. Once you've mastered this simple recipe, you'll be able to use it in so many ways, as a simple pasta sauce or as a base for ragu, or as a meatball sauce taht you can mop up with crusty bread. It's full of flavour and by making it yourself, it means you know exactly what's in it, with no additives
- 3 tbsp olive oil
- 2 garlic cloves, finely chopped
- 680g passata
- 1 large glass red wine
- 1 tbsp chopped oregano, or basil
- 1 tbsp red wine vinegar
- 1 tsp caster sugar
- Heat oil and garlic in a deep frying pan. Add passata and red wine and bring to the boil.
- Stir in the oregano, vinegar and sugar and simmer for 10 minutes. Season well with salt and pepper.
