Learn how to make a classic tomato sauce using passata, garlic, herbs and red wine for richness. Ingredients

  • 3 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 680g passata
  • 1 large glass red wine
  • 1 tbsp chopped oregano, or basil
  • 1 tbsp red wine vinegar
  • 1 tsp caster sugar

Method

  1. Heat oil and garlic in a deep frying pan. Add passata and red wine and bring to the boil.
  2. Stir in the oregano, vinegar and sugar and simmer for 10 minutes. Season well with salt and pepper.
