Give your roast dinner a new lease of life with this delicious spicy pistachio squash recipe. The perfect side dish served with meat of your choice, potatoes and greens. The pistachios add an earthy crunch.
Ingredients
- 1 butternut squash, peeled
- ½ tsp chilli flakes
- 1 tbsp olive oil
- 1 tbsp runny honey
- 50g pistachios

Method
- Heat oven to 180C/gas mark 4. Cut the butternut squash in half lengthways and remove the seeds, then cut into long slices and place in a baking dish. Scatter with chilli flakes and olive oil. Roast for 30 mins.
- Remove the squash from the oven and pour over runny honey and pistachios, return to the oven for 10 mins until cooked through and slightly charred.
