Essentials recipe Cheesy chorizo quesadillas are so tasty and ready in just 20 mins, using mainly storecupboard ingredients. The whole family will love them, oozing cheese, spicy chorizo and spring onion. They're simple but delicious, and are so quick to make midweek.


  • 1tsp olive oil
  • 2 flour tortilla
  • 30g Cheddar
  • grated 1 spring onion, chopped
  • 4-6 slices chorizo
  • 2tbsp guacamole
  • 2tbsp soured cream
  • chopped herbs
  • paprika, to serve

Serve these quesadillas cold for lunch the next day.


  1. Heat the oil, until very hot. Add a tortilla, then top with the cheese, spring onion and chorizo. Put a second tortilla on top and press down with a fish slice. Cook for a couple of mins, then turn and cook for a couple of mins on the other side.
  2. Remove to a board and slice into 6 equal triangles. Serve with the guacamole and soured cream, sprinkled with herbs and a little paprika.

I found this absolutely delicious! Quick and simple to make. Saying that I burnt the tortillas on the first go (oops!) so second time round I added a bit more oil and they were perfect. I think it's great as a little side to chicken!
