Bake Off winner Nadiya Hussain's coconut and lime oaty biscuits have no processed sugar and are sweetened entirely by natural honey and currants. They've got a fresh zesty edge to them and they make the perfect snack for when you're feeling a little peckish, but they're just as good served with a cup of afternoon tea. If you're trying to avoid sugar but have a sweet tooth, you'll be making these biscuits again and again.

Ingredients

  • 175ml clear runny honey
  • 120ml coconut water
  • 75g rolled oats, lightly toasted
  • 15g dessicated coconut
  • 115g plain flour
  • 50g currants
  • Zest 2 limes
  • 1tsp bicarbonate of soda

Method

  1. First, heat the oven to 180C, gas 4. Line two baking trays with sheets of greaseproof paper.

  2. Pour the honey and coconut water into a pan and bring to a simmer, stirring occasionally, until thick - it takes around 8 minutes.

  3. Put the rolled oats, dessicated coconut, flour, currants and lime zest into a bowl. Add 15ml boiling water to the bicarbonate of soda, then add to the honey and coconut water mix. Next, add the dry ingredients to this and give it a thorough mix.

  4. Put heaped tablespoonfuls of the mixture onto the previously prepared baking trays, making sure they are slightly spaced apart as they will spread out as they cook. Bake for 10-12 minutes or until they are golden brown.

  5. Leave the biscuits to cool on the baking trays, then transfer to a wire rack to finish cooling completely.
