Banana waffle s’mores are a sweet and moreish cookie sandwich that make the ultimate afternoon treat or family friendly weekend dessert. We’ve used Belgian stroopwaffles as the base of these sweet sandwiches, and filled them with an irresistible mixture of sliced banana, Lotus biscuit spread, salted caramel, and marshmallow fluff. Think banoffee pie that you can pick up with your hands! These clever banana waffle s’mores are a cross between a classic British banoffee pie and a classic American s’more marshmallow cookie sandwich. Kids will love these fruity treats, and why not let them get hands on in the kitchen and make these no bake banana waffle s’mores together.
Ingredients
- 8tbsp marshmallow fluff
- 4tbsp low-fat cream cheese
- 4tbsp salted caramel spread
- 8 caramel waffle biscuits
- 4tbsp Lotus Biscoff spread
- 2 small bananas, sliced
- 200g bar milk chocolate
- 1tbsp sunflower oil
- 4tbsp desiccated coconut

Method
- In a bowl, mix together the marshmallow fluff and cream cheese, so it’s a smooth spreading consistency.
- Spread 1tbsp salted caramel spread on to each of 4 of the waffle biscuits and 1tbsp Biscoff spread on to each of the remaining 4 biscuits.
- Divide the marshmallow cream-cheese mixture between 4 waffle biscuits. Top with some sliced banana and sandwich together with the other biscuits.
- Melt the chocolate and sunflower oil in a bowl, resting over a pan of simmering water.
- Tip one side of each waffle sandwich in the melted chocolate and then dip into the desiccated coconut. Chill for 10 mins before serving.
