- 3tbsp sweet corn
- 3tbsp black beans, drained and rinsed
- 1 pickled chipotle chilli, chopped
- juice of ½ lime
- handful of coriander, chopped
- Combine all the ingredients in a bowl and mix well. Season to taste then store in the fridge until serving.
