These rocky road truffles make a truly lovely homemade gift. They are great for any time of year or special occasion and you are bound to receive huge thanks. To make these delicious treats we have used a ready-made chocolate fridge cake or rocky road. Doing this makes the truffles even easier and quicker to make. You might also like to make double the fridge cake mixture and use the truffles to decorate it. We’ve used desiccated coconut, freeze-dried raspberries and edible glitter to coat the truffles but you could also use chopped nuts, gold leaf or simply a dusting of icing sugar. These tasty little rocky road truffles are so much more satisfying than shop bought chocolates and your loved ones will really appreciate the effort you’ve gone to. Plus, the recipe is so simple that it makes a great activity to do with children. - Put the fridge cake into a large bowl and microwave on High for 1 min to soften. Stir to mix the marshmallows with the chocolate.
- Scoop 16tbsp on to a parchment-lined tray and chill for 10 mins, to firm up a little.
- Put the dried raspberries, coconut, icing sugar and silver glitter on to 4 separate saucers.
- Shape the chocolate mixture into balls, then roll 4 in each of the different coatings.
