This banana and honey loaf couldn't be easier to make, plus all the ingredients you'll most likely already have at home. This is one to throw together if guests unexpectedly announce their arrival as it's super simple and will be ready in an hour, so they can arrive to the scent of freshly baked banana bread! The honey puts a really nice interesting twist on things too. It serves 10 to 12 people which makes it the ideal recipe for when you're having people round. Try this delicious banana loaf as a breakfast treat at the weekend or a comforting afternoon snack.
Ingredients
- 75g butter, softened
- 75g caster sugar
- 1 large egg, beaten
- 225g wholemeal flour
- 2 tsp baking powder
- 3 medium ripe bananas, mashed (250g)
- 2 tbsp clear honey

Method
- Preheat the oven to 180°C, gas mark 4. Grease and base line a 1kg loaf tin.
- Whisk the butter and sugar together until pale and fluffy, gradually whisk in the egg.
- Mix the flour and baking powder together and fold into the butter mixture. Stir in the bananas and honey. Spoon into the prepared tin and bake for 40-45 mins or until firm to touch and a skewer comes out clean. Allow to cool slightly before removing from the tin.
