Muesli was originally invented in the late 1890’s by Dr Bircher Benner for his patients in a Zurich hospital. It makes a great sustaining dish for breakfast and for variety you can add any dried fruit, nut, seed or fresh fruit you like to the basic mix. It’s a really healthy breakfast dish that is perfect for making in bulk and storing in an airtight container ready to be used. Sweet, healthy and flavor-packed all in one.

Ingredients

  • 200g rolled oats
  • 200ml milk
  • 80ml apple juice
  • 50g raisins
  • 50g lightly toasted almonds, roughly chopped

To serve:

  • 1 dessert apple, chopped
  • 1 kiwi fruit, peeled and chopped
  • Natural yogurt
  • Seeds of your choice such as pumpkin, sunflower and poppy
  • Agave nectar syrup or honey

Method

  1. The night before, put the oats into a bowl with a cover. Add the milk, apple juice, raisins and almonds. Stir well, cover and leave in the fridge overnight.
  2. The next morning stir in the apple and kiwi fruit. Spoon into bowls and top, as you please, with yogurt, seeds and Agave syrup.

Agave syrup can be bought in the health food section in supermarkets. It has a mild taste and as it has a low glycaemic index it doesn’t cause a quick rise in blood sugar levels.
