Fish is so simple to cook and makes a great healthy dinner. Our simple buttery plaice takes minutes to cook and can be all done in one pan. Fry your fish in butter and then add carrots, celery and runner beans. A great mid week meal for the whole family to enjoy. It would also make a filling lunch too served with crusty bread. This recipe serves 2 people and works out at 385 calories per portion.

Ingredients
- 1 medium carrot, peeled
- 1 stick of celery
- 3 runner beans, trimmed
- About 60g butter
- 2 large plaice fillets or 4 smaller ones, seasoned
- About 4 tbsp white wine
- Juice of 1⁄2 a lemon
- 2-3 tsp of capers
- Lemon cheeks, to serve

Method
- Cut the carrot, celery and beans into thin strips (on the diagonal for the beans).
- Heat half the butter in a frying pan. When it starts to foam, add the fish and cook for 2 mins on each side.
- Take the fish out. Melt the rest of the butter in the pan and, when foaming, add the vegetables and stir-fry for a minute. Splash in the wine and lemon juice, and simmer for a few minutes more, until reduced. Put the fish back in the pan, add the capers and spoon the sauce over. Serve with the lemon cheeks.
