Tips for the perfect Christmas vegetables
Red cabbage is so easy to prepare and a great treat come Christmas day. Our favourite way to cook red cabbage is with red onions, a pinch of garlic, a sprinkle of cinnamon and drizzle of red wine vinegar. It makes a really fab Christmas side recipe. You'll love it!
Boil your carrots to soften them and then glaze your carrots in honey and roast. You'll never cook them the same way again! Or if you'd rather keep it simple gently boil and serve - they're so simple.
Cooking your roast potatoes in goose fat really will give them a nice crunchy finish. Make sure you heat the fat until it sizzles then toss par-boiled potatoes in it to get an even coating. Obviously, it's not suitable for vegetarians so a crispy polenta coating is a nice alternative, or use vegetable oil instead.
Sprouts have a reputation as the Marmite of vegetables, but if cooked correctly, they can be spot on! Don't overcook your sprouts so they still have a nice bit of crunch. If you have guests who really can't stand them, try roasting them with bacon or pancetta. It's enough to convert anyone.
A special treat at Christmas - cauliflower cheese. It's a great way of making the most out of your large cauliflower. You can serve some boiled or softened and the rest can be sprinkled with plenty of cheese, drizzled in a white sauce and baked.
Parsnips may pop up at the occasional roast throughout the year but Christmas is their time to shine. Give them a little more attention and roast them with honey and mustard so they can stand out against the other flavours on your plate.
