Ingredients
- 3 tbsp olive oil
- 2 garlic cloves, finely chopped
- 680g passata
- 1 large glass red wine
- 1 tbsp chopped oregano, or basil
- 1 tbsp red wine vinegar
- 1 tsp caster sugar

Method
- Heat oil and garlic in a deep frying pan. Add passata and red wine and bring to the boil.
- Stir in the oregano, vinegar and sugar and simmer for 10 minutes. Season well with salt and pepper.
