  • Dairy-free beef stroganoff

    Dairy-free beef stroganoff

Dairy-free beef stroganoff is a great twist on the classic beef stroganoff recipe which is traditionally made with soured cream. But in this dairy-free beef stroganoff we’ve used a non-dairy alternative to cream - there are several available made from oats or soy. We also added a little lemon juice to give the slight sharpness of soured cream. Diary-free beef stroganoff is a quick dish to make using tender cuts of beef such as rump or sirloin steak. However to cut the cost of a stroganoff you can use lean pork steaks instead and even lambs liver cut into strips is very tasty cooked this way. Served with boiled rice and a crisp green salad it makes a delicious speedy meal.

  • Chicken with dairy-free creamy mushroom sauce

Chicken with dairy-free creamy mushroom sauce

A simple chicken breast is transformed with this deliciously ‘creamy’ dairy-free mushroom sauce. There are several dairy-free alternatives to cream available in most major supermarkets and health food shops – either oat based or soya based, just use the one you prefer. The sauce is quite rich so we’ve just served this dish with a selection of vegetables but you can add potatoes, rice or pasta if you’ve got hungry mouths to feed. Make the sauce with chicken stock for a quick mid week meal or dress it up by adding white wine for a weekend treat – either way it’s delicious.

  • Dairy free panna cotta

Dairy-free panna cotta with poached rhubarb

You’d never believe this silky smooth panna cotta is dairy-free, it’s so delicious. Coconut milk makes this dairy-free panna cotta with poached rhubarb very creamy with just a hint of coconut flavour. You can use soya milk, rice milk or oat-based milk subsitute instead of the coconut milk but it won’t be quite as creamy. When rhubarb is in season it makes a lovely topping to this dessert but poached plums or mixed summer berries are equally as good when in season. Panna cotta is set with gelatine so you need to make it at least 3 hours before you want to serve it, or the day before, to allow plenty of setting time.

  • Gazpacho recipe

    Gazpacho

This easy Gazpacho recipe is a classic. There is nothing more refreshing on a scorching hot summers day than a bowl or glass of this refreshing chilled soup. You will find this traditional Spanish soup served everywhere in Spain where it is made with fabulous sun-ripened vegetables. You can make this with fresh flavourful summer tomatoes if you like, but it is best to skin and de-seed them first, so we have made this soup with canned tomatoes. This chilled soup makes a great summer canapé served in tiny shot glasses too. This recipe serves 6 people and will take only 15 mins to make plus chilling time.
