A wonderful fruity combination, this chutney is delicious eaten with a chunk of cheddar. Easy to make, this is a bit of a one-pot-wonder, as all the ingredients are cooked together to make a marvelously tasty and versatile condiment. Apples, figs, apricots and sultanas all blend to perfection. Add it to a ploughman’s lunch to give a bit of spicy bite, slip it into sandwiches to pep up some ham and cheese, or perhaps just enjoy a dollop with your favourite curry.
Ingredients
- 550g apples, diced
- 100g chopped dried figs
- 100g chopped dried apricots
- 50g sultanas
- 5 cloves of garlic, finely chopped
- 1tbsp grated fresh ginger
- 400ml cider vinegar
- 400g caster sugar
- 1tsp salt
- ½tsp cayenne pepper
- ½tsp mixed spice

Method
- Put all the ingredients in a stainless steel pan and bring to the boil. Turn the heat down and simmer for about 30 mins. Stir frequently to prevent the mixture from sticking, until it thickens to a jam-like consistency.
- Allow the chutney to cool, before pouring into clean jars. Cover with non-metallic lids and store in a cool place.
Top Tip for making Fig, apple and apricot chutney
If you like your chutney hot, double the cayenne pepper measurement to 1tsp.
