Halibut is a white, fleshy fish that's really tasty with mashed potatoes and simply flavoured with lemon, chives and pepper.
Ingredients
- 4 halibut steaks
- 60g (2oz) fresh white breadcrumbs
- Finely zested rind of 1 lemon
- 3-4tbsp chopped fresh chives
- Salt and freshly ground black pepper
- 3tbsp olive oil
For the mash:
- 1kg (2¼lb) potatoes, peeled
- 2 leeks, trimmed and sliced
- 4tbsp olive oil
- Salt and freshly ground black pepper
- Chives, for garnish

Method
- Set the oven to gas mark 6 or 200°C. Rinse the halibut, pat dry with absorbent kitchen paper and place on a baking sheet.
- To make the crust, mix together breadcrumbs, lemon zest, chopped chives and seasoning, and then stir in olive oil. Divide the mixture between the halibut steaks and press on to the top of each. Bake the fish in centre of the oven for 20-25 mins, or until crust is a light-golden colour.
- Meanwhile, make the mash. Place potatoes and leeks in a pan and cover with water. Bring to the boil and then simmer for 20-25 mins, or until potatoes are just tender. Drain vegetables, add olive oil and seasoning to pan. Mash well.
- Spoon some mash on to a plate and top with the crusted halibut. Garnish with some chives before serving. (Not suitable for freezing).

Sea bass or haddock fillets make a nice alternative to halibut in this recipe, if you prefer. Useful infoHalibut is classed as a flatfish and is one of the largest flatfish in the sea. It has firm, white flesh, and if you're able to choose steaks cut from the middle section, then it will be less boney than the flesh from near the tail.
