The classic taste of hummus has become a regular part of many a vegetarian’s diet. Made with protein rich chickpeas, olive oil, cumin, garlic and lemon, it has become a staple to a meat free diet. These wraps are too good not to share and everyone will enjoy them, veggie or not. We’ve used shop bought hummus for a speedy snack but if you’ve got the time, it’s always worth whizzing up your own. Try griddling the tortilla wraps to achieve the charred stripes which add extra flavour.

Ingredients

  • 4 tortilla wraps
  • 200g pot of any hummus, flavoured or plain
  • 2 large tomatoes, chopped
  • 1 bag of mixed leaves
  • Salt and freshly cracked black pepper

Method

  • Lay each wrap flat on the work surface and spread over 50g of hummus. Top with a handful of salad leaves and some diced tomatoes, and season with little salt and pepper. Roll and serve.
