Lassi is a traditional Indian yogurt drink that tastes a bit like a fruity milkshake. It’s quick and simple to prepare, and a great way of getting the family to eat healthy foods like fruit and plain yogurt without additional sweetener. You can have this mango lassi ready in 5 minutes flat – just blitz the ingredients in a blender then add cardomom and a sprinkle of pistachios, as liked.
- Flesh from 1 large ripe mango
- 150ml pot plain yogurt
- About 100ml milk
- 2 cardamom pods, crushed, husks removed, seeds crushed
- Pinch of salt
- A few chopped pistachios
Put the mango flesh and any juice into a blender. Add the yogurt and whizz to a purée. Add enough milk to get the consistency you like.
Stir in the crushed cardamom seeds and a pinch of salt (or salt the rim of the glass). Pour into glasses. Sprinkle with chopped pistachios. Add lime juice or sugar to taste.
